. ROTIS Roti is an Indian word for flatbreads. In Caribbean culture the word is used both for the bread and the wrap or sandwich made with the bread. Dhalpuri A large, soft flatbread inlaid with seasoned ground split peas (known as dhal). Paratha A large, soft flatbread with a flaky exterior and no filling. Also known in Trinidad as “buss-up-shut”. Aloopuri (Potato Roti) A large, soft flatbread inlaid with a seasoned mashed-potato mixture. (Aloo is an Indian word for potato) Pastries (Baked) Beef Pie A small round patty filled with seasoned lean minced beef. (The lean meat is minced in-house, and no fat or scraps are added to it). Chicken Pie A small semi-circular patty filled with seasoned minced chicken. (The lean meat is minced in-house, and no fat or scraps are added to it). Pineapple Tart A triangular pastry filled with pure pineapple jam. Currant Roll A slice of rolled pastry filled with currants. Coconut Roll A slice of rolled pastry filled with ground coconut. Cheese Roll A pastry roll filled with a seasoned cheese mix. Black-Eyed Bean Cake A round cake-like pastry filled with a jam made from black-eye beans. Cassava Pone A heavy cake-like sweet made from cassava. Fried Foods Aloo Pie An oval-shaped pie filled with a mashed potato mixture. (Optional tamarind and pepper sauces inside or on the side) Doubles A sandwich consisting of curried chick peas (chana) between two flat fried buns (bara) made with split-pea flour, served with chado-benni (bandanya) sauce. Sauce contains tamarind also. (Optional pepper sauce inside or on the side) Polouri A small ball of seasoned split-pea flour mix. Served in quantities of six. (Served with our tamarind sauce on the side) Potato Ball A ball of seasoned mashed potato mix, covered with a thin seasoned dough. (Served with our tamarind sauce on the side) Samosas Party Sized Vegetable Samosas. Filled with delicately seasoned mashed potatoes. Curries Our curry is made with the finest ingredients to suit the taste of all our customers. It is nicely spiced but not hot. It has a distinctly Caribbean flavor as against the very hot South Asian varieties. Our curried meats or vegetables are used in our roti wraps or sold in 1lb. portions fresh or frozen. The containers for the frozen curries are microwave-safe. Our shrimp and pumpkin are sold frozen only. All our meats are boneless. Roti Wraps Sometimes called just “roti”, although the word “roti’ is, by original meaning, the bread only. The wraps are curried meats and vegetables wrapped in a dhalpuri roti or paratha roti. They are offered in two sizes. The smaller size is with dhalpuri only, not paratha. Frozen Foods Roti Freezer Packs The “freezer-pack” product was developed for those busy persons who wish to have roti always readily available in the refrigerator. Freshly cooked rotis (dhalpuris, parathas or aloopuris) are cooled, rolled and cut in half. The halves are individually sealed in plastic, and ten pieces (ie. five rotis) are placed in a clear plastic container for convenient freezer storage. The freezer packs remain in our freezers no more than a few days. Our testing shows that it can remain in a freezer for six months and still look, feel and taste fresh after thawing. The method for thawing and heating the frozen rotis is as follows: Take one or more pieces from the box. Cut open the plastic wrap, remove and place in microwave for about one minute. (You may cover the thawing roti with a sheet of paper towel before microwaving). Take out the roti piece and unroll gently. Replace in microwave for approximately 45 seconds. It should be hot and soft. Serve hot. Sweets and Ice Cream Gulab A small rolled plain-donut-like pastry with a sugar coating. Barfi A small soft sweet made from dairy cream and spices. Ice Cream Manufactured by Tropical Treets(TM) ; they are available in the following flavors: Coconut, Mango, Pistachio Kulfi, Rose Faluda Kulfi, Lychee, Grapenuts. Coconut Dessert Chilled dessert made with real coconut jelly and coconut water. Bakery Items Our breads, cakes and pastry are made in-house. We use no preservatives or chemicals Recommended Bakery Item: Our Tennis Rolls are a burger sized bun which is slightly sweet, and flavoured by lemon. For a wonderful late night snack, or quick lunch - a lightly toasted Tennis Roll with butter and cheese is just heavenly ________________________________________________________________ General Notes: Halal | All our meats are purchased from meat suppliers widely recognized by the | | community as selling only halal meats. In the case of meats it | | refers to meat of animals slaughtered in a humane way with the name of God | | being mentioned while the slaughtering is taking place. | | | It is basically a way of recognizing and acknowledging the fact that life is sacred and that the life of the animal | | can be taken, and the meat eaten only with the permission of God. The act of slaughtering the | | animal must be a sober one reflecting this awareness. In addition all the blood must be drained from the animal, unlike other ways of slaughtering where much of the blood remains in the animal. _________________________________________________________________________ Oils and fats: We use only corn oil or soyabean oil for frying or cooking. When making Parathas we use only Soya margarine. Best quality ingredients: We strive to use only the best quality ingredients in our products. No eggs in most of our products We do not use eggs in most of our products with the exception of a few products in our Bakery. For some of the eggless products we make the pastry 'yellow' by using a mixture of milk with a touch of food colouring. Roti for "Prayers" Some of our customers order roti for religious functions and require that the rotis do not come into contact with meat or eggs. At Alima's we have the ideal facility to accomodate these requests. We have two separate kitchens, and in one we cook only rotis (Dhalpuris, Parathas, Aloopuris), and in the other we cook the curries, meats etc. Also the staff who cook the rotis do not cook the curries. The untensils we use for each kitchen are also separate. | | | | |
